10 days of Christmas
Hi again. Today's gift is...
A recipe for amazing gingerbread cupcakes. These are delicious! I am just going to write the batter part because it tastes good with almost any frosting. Cream Cheese tastes the best. This is out of THE CUPCAKE DIARIES by Kathrine and Sophie on the show: DC cupcakes. So, here's the recipe.
2 3/4 C flour
3 tablespoons ginger
2 teaspoons of baking soda
1 1/2 teaspoon ground Cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/4 teaspoon salt
10 tablespoons of butter at room temp.
1 C dark brown sugar
3 eggs
1 1/4 C molasses
1 C hot water
1. Preheat oven at 350
2. sift dry except brown sugar, set aside
3. Cream together brown sugar and butter with mixer (3-5 minutes) Add eggs and molasses
4. Add some dry ingredients and a little hot water
5. Repeat
6. Bake for 16-18 minutes
7. Wait and then add frosting
